Good morning friends!
Gosh, when did it become December?
Well, today I guess. Sorry I’ve been a little MIA, I’ve been working on school applications non stop all week but as of last night they are all submitted. WAHOO! So much relief. So Andy and I went out to celebrate last night, I had one to many glasses of wine, and I’m just now pulling the pieces today this morning.
Starting with breakfast.
Something about eggs and hangovers, they always hit the spot right? Pumpkin pancakes with butter help too.
Thanksgiving was wonderful, but man, I really really missed my family this year. It seems that the more years I’m in Charlottesville for Thanksgiving, the more I miss my family. I told momma coale I was coming home next year no matter what.
But the Griswold’s are closest thing to family and I’m so thankful for them taking me in and loving me so well. I ate the best coconut cake of my life and shot my first gun on Thursday. Definitely a Virginia Thanksgiving. And to top off the weekend, this was last night’s sunset. Seriously.
Other highlights from November were coming in under $200 for the grocery challenge! Woah, baby I totally didn’t think I would make it, but it’s amazing what can happen when you practice some self control. I clocked in at $197.81 and my nutbutter stash is officially almost GONE! Ya’ll I usually have like 12 jars open and this is our nutbutter shelf now. Note that the only ones that are mine are the two TJs almond butters that are almost empty. I can’t wait to restock today!
There was a lot of traveling in November too. First I went to Austin with Whitney who I love to death. And even though she lives in Atlanta, she’s become one of my closest friends. It was a spontaneous trip and I’m so glad we went!
The following weekend I was in New York City. It made me really miss my college friends but also super excited at the possibility of moving there!
And then the next weekend I finished the Richmond marathon! After not running for two weeks because of a hip injury I was over the moon happy when I actually finished. It was the proudest marathon I’ve ever run. I’m still nursing this bum hip but can’t wait to get back out there.
We started the Rest and Rest Challenge which has been a very, very good thing. How are you guys doing??
My favorite dinner I ate was these sweet potato nachos.
And I made these vegan pumpkin chocolate muffins over 10 times I think. They’ve become my favorite muffin recipe this season. Perfect for breakfasting or snacking and to give to all your family and friends!
