I’m guest posting over at Clare’s blog today so head on over there if you want to check that out! 🙂
Ya’ll, I think spring has finally arrived.
We have had some gorgeous days here this week that make me so happy. Warmth, people. Oh, it feels so good. I actually even broke out my sandals this week and vowed I wouldn’t wear boots again till the fall.
On Monday it was in the high 60s, clear blue skies and the perfect weather for a hike so my mom, little brother and I headed out to hike Crabtree Falls!
Then yesterday was another picture perfect day of sunshine and clear blue skies. I can’t stop smiling at this weather. I think after the brutalness [that’s now a word] of this winter, spring just seems that much sweeter.
This week has been full of good eats, I have been well fed. Since it’s WIAW, let’s talk about food shall we? Ok. Yesterday began with a green smoothie [1/2 scoop vanilla Vega, frozen mango, swiss chard, almond milk] right when I woke up around 7 and then an hour or so later a plate of chocolately spelt pancakes with sliced strawberries, peanut butter and coconut oil. On of my favorite breakfasts as of late!
Momma Coale and I spent the morning at a coffee shop working away. I had a Nutshell client, some freelance writing to do and my inbox to work through and she had some Algebra stuff to prep. And then I jogged to a Barre class before meeting my mom on the downtown mall for lunch in the sunshine!
My favorite place to go lunching on the mall is the Blue Ridge Country store. Only thing is, it’s only open M-F so when I was working full time I never really got to go. But now, not now. It’s an adorable little country store with an amazing salad bar that’s much cheaper than WF and tons of other little goodies. We piled some boxes full of all kinds of salad bar fixings and went outside to soak up the sun.
I don’t even know what all went in my box, but it included a big bed of spinach with a falafel, some chickpea salad, lentil salad, forbidden rice, asian snow peas, kim chi, pesto pasta and I have no idea what else. Along with some chips we shared, an apple and some of my mom’s oatmeal raisin cookie she gave me.
Post Girls on the Run snackage of carrots + AB plus a banana almond muffin.
We ate at Zinburger, a new restaurant in Cville, that’s a gourmet burger and wine bar. Sounded right up my alley.
And since we women, we like to split things.
Plus you get to taste more!
We started with the farm salad, which was full of quinoa, chickpeas, feta, carrots, tomato, avocado and cabbage with a champagne vinaigrette.
Then we ordered the sweet potato fries and zucchini fries along with the veggie burger with side salads instead of the bun. Both fries were awesome, and the veggie burger was actually really good too. They’re housemade and after all the fries, it was the perfect lighter bite that didn’t leave me feeling overly stuffed.
And the best part, there’s no dishes to clean up!
One of these cookies hit the sweet spot after dinner, have you guys had these??
My mom and I are obsessed with the chocolate chewies from Whole Foods. I must try to make these at home asap.
Alright ya’ll, that’s a wrap! I needed a little break, but will be back with the more thoughful-info-nutrition-related WIAW posts next week!
It’s another sunny and warm day here so we’ll see where it takes us!
And before you go, tell me something delicious you’ve been eating?
