But I’m already ahead of myself talking about dinner on WIAW. What about breakfast and lunch?
Breakfast was back to the usual oats! At home last week my favorite thing was a slow morning with coffee and an elaborate breakfast, but now that I’m back to the hustle and bustle it’s back to oats. Pumpkin oats with apples and sunbutter!
Followed by a green smoothie made with a scoop of Amazing Grass, 1/2 frozen banana, a cup or so of almond milk and frozen spinach.
When I was home I found these seasonal Larabars that are amazing! I usually only like the chocolate chip varieties or PB cookie but the pumpkin pie, gingerbread and this snickerdoodle are all amazing.
Dinner was super simple because I didn’t feel like eating more leftover soup since I had it Sunday night. I sauteed up mushrooms and kale in coconut oil, then fried up two eggs in coconut oil and ate it with a sweet potato drizzled with maple syrup. Besides the passive time it takes for the potato to bake, this dinner came together in under 10 minutes.
