WIAW is back! I took a little break with finals and then the holidays, but I’m excited to write these posts again, they’re some of my favorite to write. I have some ideas for posts written on my desktop stickies, but would love to have your input on what you want to read about. Going with the flow and being flexible with food + exercise when you’re out of routine is something that takes time and something I wasn’t always good at. I think some people thrive off routine and others are better at adapting to change. I’m kind of in between. Routine and structure makes me feel productive and more stable, but I get bored easily and crave variety and spontaneity. I totally envy people who have a routine and can stick to it because my life feels a little chaotic at times.
One of my favorite things about being out of my daily routine when I was home was slow, lazy mornings that included more elaborate breakfasts. I can confidently say, breakfast is my favorite meal and I love it even more when it includes being wrapped up in my robe, slippers on, and watching the Today show with a strong cup of coffee. Along with pancakes and the occasional waffle, I ate eggs and toast most mornings. Two eggs scrambled with kale and mushrooms, apples fried in a bit of coconut oil with cinnamon and maple syrup and two pieces of spelt bread with butter + jam or almond butter. Morning bliss people.
Lunch was usually something on toast- fried eggs, avocado + tomato, or melted organic sharp cheddar + tomato and black pepper broiled until melty. I typically eat vegan when I’m in my routine, but at home my momma was cooking and we had a variety of good cheeses. And when that happens, well, it happens. I ate this cheesy tomato toast with a kale salad similar to the ones I eat for lunch all the time- my mom’s hooked too. Kale massaged with 1 tsp olive oil and vinegar + a sprinkle of nutritional yeast + chopped bell pepper, roasted butternut squash and roasted green beans + avocado. This lunch hit the spot.
Momma Coale made Mexican one night and I went with nachos instead of tacos- TJs tortilla chips + black beans + sautéed peppers and onions in taco seasoning + salsa, lettuce and melted cheddar. Craving crushed.
And at nighttime my little brother would build a fire and we’d cozy up with decaf coffee and a few Christmas cookies. Momma Coale and I baked up about 6 or 7 different varieties and then stuck them in the freezer for us all to eat on over break. It was awesome. My fav were the ginger molasses cookies and seven layer bars.
I still have a couple weeks of break before school starts on the 20th and I’m soaking it all up. Although, I will say now that it’s been over 3 weeks I’m kind of itching to get back to school. But until then, I’ll enjoy the lack of routine for the next couple weeks. Hope you’re having a fabulous start to the New Year too!
