I slept in till 8:30, had an RD coaching call at 9 and now we’re about to make brunch. Pancakes or avocado toast is the question right now.
You guys, I’m in full blown vacation mode. Like that mode where any needed task seems like a monstrous undertaking. I thought yesterday was Wednesday so I guess I’m doing a good job at this rest thing.
Lunches lately have been my favorite meal of the day, and typically I’m like lunch….meh. But I’ve been in a total sandwich mood which is bringing back lunch as number one. One day was turkey + avocado + tomato + spinach with chips and a kale salad (massage kale in olive oil and apple cider vinegar, sprinkle with sea salt and parmesan) Plus an unpictured apple.
Yesterday was an open faced turkey, feta, avocado and tomato sandwich with more kale salad, chips and a sliced apple. Can we talk about these chips for a sec? My mom always has the coconut oil and avocado oil variety in the pantry and I’m usually not that into plain potato chips…I’d take a bbq or salt and vinegar chip any day instead, but THESE are so good. So crunchy. So awesome.
Breakfast has been toast every day either with two fried eggs or yogurt. Can I make a PSA? Always buy full fat yogurt. Not only does it taste 324823984392 times better (I can’t eat 0% anymore, it makes me gag with the tanginess) but I find it digests better too. Plus the hormone testosterone suspends in water and estrogen suspends in fat, so in buying full fat you are getting the natural balance of hormones in your yogurt aka the way nature intended. I’m totally into Stoneyfield’s whole milk varieties. Super thick and creamy and zero tanginess — even the plain. Fage is also amazing, but I like that Stoneyfield is organic and grass fed. –> I always will support those kinds of farming efforts.
Momma Coale has made sloppy joes one night (she makes a killer joe) and veggie enchiladas another — both went unpictured because I was engulfed in This Is Us, my glass of red wine, and the roaring fire.
And snacks have included lots of popcorn and white chocolate covered pretzels. I usually just eat plain salted popcorn but since it’s the holiday season I figured I’d do something a little different. So trail mix popcorn it has been!
Literally, this is more of a “guide” than a recipe and it only includes what you see above (plus coconut oil or really any oil for popping — I like coconut oil because it’s richer and a little buttery.)
All you do is first pop your popcorn. I like 1/3 cup of seeds to 2 tbsp of oil. Place both in a saucepan, turn the heat to high and once you hear the first pop, shake shake shake the pan back and forth until there is about a second between each pop. Then take it off the heat so it doesn’t burn. Alternatively you could of course just use microwave or bagged popcorn. You do you.
Then I throw about 1/4 a cup of m&ms and silvered almonds into the mix and a couple handfuls or pretzels along with a teaspoon or two of sea salt and there you go. Sweet and salty and great for like anytime you want to snack.
Rest a lot and have the best week. I might be back before Christmas but if not, have a very MERRY CHRISTMAS!

Great blog! I was wondering if you could do another Q&A session on Youtube or on here. Mainly I’m wondering about issues that arise with increased calorie intake after restriction. For instance: bloating/gastrointestinal distress, eating when not hungry, water retention/initial weight gain. Additionally, can you address how long these symptoms might be endured?

I’d love to hear about this too! Plus your genuine thoughts on starvation mode? Is it really real? I feel like I might be experiencing it but I’m too scared it’s just a myth…

Full fat yogurt all the way! So good and it boosts absorption of those fat soluble vitamins. Glad you’re having a good time at home, enjoy your vacation and happy holidays!
