This weekend I’m not working and instead going to Charlottesville for my bachelorette weekend. To say I’m excited is an UNDERSTATEMENT. One, I have my first weekend off from work since the start of 2017. Second, Charlottesville is like my happiest of happy places. And third, it’s with 10 of my absolute besties. Heart explosion.
There is a group of six of us driving down from NYC and all the others are flying in – I cannot wait to rest a lot, drink a lot of wine at the vineyards, chill in the hot tub a lot, hike one of my favorite hikes, eat really good food, and share Charlottesville with some of my gfs who have never been. Most of all, I feel insanely grateful for these friendships and weekends off to travel. Gahhhh, I can’t WAIT.
We’re road tripping this morning from the city in a very large SUV so that should be super fun and will be there till Sunday. I’ll have a full recap next week, but in the meantime here’s a bunch of eats lately that I found on my iPhone – I hope it inspires you to eat satisfying foods.

breakfast as Nick’s sister’s house two weekends ago of eggs and bacon and banana + PB
brunch on Sunday at the Penrose – I went with the burger, Nick got the breakfast burrito and we split the fries….plus a bacon bourbon bloody mary. It was as awesome as it sounds.
Thick sliced whole wheat bread {that’s sooo doughy!} from Whole Foods with cashew butter and banana…I eat this on repeat.
Pipcorn kettle corn while working.
Nick made this spicy and creamy and super good Thai chicken soup that we had with sautéed brussel sprouts on Wednesday.
Dig Inn for dinner a few nights last week – a mess of spicy brussels, carrots with kale pesto and roasted chicken over farro….along with a kitchen sink cookie.
Random lunches of fried eggs with turkey bacon I bought on sale {there is nothing wrong with regular bacon…see above…but turkey was on sale} along with popcorn for carbzzz.
The Thai crunch salad from Just Salad is my fav and I’ve eaten it lots these past two weeks.
Dos Toros carnitas bowl with rice, guac, veggies and tons of pico for lunch yesterday.
Packed lunches last week were brown rice with pesto, chicken, baby kale and roasted broccoli – will definitely make this again! There’s no recipe, it’s just those simple ingredients mixed in a bowl.
More overnight oats in a jar….made with 1/2 cup each of oats, milk and full fat greek yogurt and topped with banana and crunchy PB.
Lunch date in Bryant Park last week when it was sunny and warm – WF hot bar {roasted carrots, tahini cauliflower, spicy chicken and greens along with an apple}
Snacking on the creamiest Siggi’s yogurt + granola at work. Totally into their 9%
More salad at Just Salad {kale with apples, goat cheese, sweet potatoes, chicken and beets and the chewiest bread EVER}
And like…a lot of these chocolate bars…at least a few per week, it makes the best snack.

I love the Weekly Eats posts! I’m such a foodie, and seeing what other people are noshing on is my fave!
I was wondering, though, you’ve had a lot more animal products in your diet (it seems) lately. Has this switch been just a response to what your body is craving, a change in your food philosophy, etc..? There is so much information (much of it conflicting) out there about animal vs. no animal products and I’m always interested to hear what my fave RD reads have to say about it.

Yes you’re right – it’s been a slow transition as I’ve matured in my intuitive eating journey and found what works best for me. It’s a question I get often that I’m going to write a post on next week!

Have a blast this weekend!! And everything looks amazing. You really do get to eat such a wide variety of delicious food. YUM! Just curious, I’ve been reading some of your older blog posts and just wondering when and why you started including more meat/eggs/dairy into your diet. I know you never cut them out completely, but in the past you often talked about eating animal products sparingly. Just curious if it was social reasons, health reasons or just eating-what-sounds-good reasons (all valid!) that has cause you to include more animal products in your diet. Thanks for the message you spread about having a positive relationship with food!!

So looking forward to hearing about this. I also, after spending years as a veggie, have started craving and eating more meat. (I have always eaten lots of eggs, milk and yogurt). It’s something I’m learning not to feel guilty about or feel is *bad* for my diet. My runners body feels much better for it! Can’t wait to hear your journey! 🙂
