My momma is in town this weekend! YESSSSS!
It’s her first time in Boston and I can’t wait to explore the city with her – it’s new to both of us! We will be eating and drinking our way through this place over the next 48 hours. I’ll be back with a recap on Monday.
She flew in yesterday evening and we took her to a wine tasting at Urban Grape and then cooked salmon at the house. Nick heads to a bachelor party this weekend so it was perfect timing for some momma/daughter time. Nick will be home Sunday and she doesn’t leave till Monday so he’ll get his Momma Coale fill.
Let’s round up the eats from this week! I hope this inspires you to eat satisfying food. Whether that’s cooking or ordering takeout or heating up a frozen meal. Intuitive eating can look a lot of different ways.
Breakfasts
I’ve eaten toast in various forms for 90% of the past month and I’m nowhere sick of it. TOAST FOR DAYZZZ! Paired one morning with a green smoothie (frozen banana and blueberries, almond milk, Vega protein powder, frozen spinach and some flax) and topped with avocado + everything seasoning and pb + j. Favorite bread is Iggy’s sourdough that I pay too much $$ for but it makes me so happy. Maybe I’ll try to make my own loaf one day.
More toast! this time with whole milk greek yogurt (fav brand is Fage) topped with granola from the bulk bins and peanut butter + banana and pb + j toast.
Obviously…more toast. Topped with avocado + everything seasoning from TJs plus two fried eggs with hot sauce and the other half of the banana I ate earlier with almond butter. What else can I do with toast?? Share ideas in the comments!
Lunches
Leftover bean dip from Super Bowl Sunday with tortilla chips and I had an apple and some dark chocolate after this. I actually made some lentil soup for lunch this week..but I have not been craving it for lunch so we’ve been eating it for dinner (see below) and instead I’ve been throwing together random lunches. That feels intuitive this week for me.
We had leftover millet from last week so I put some spinach and leftover veggies from Friday night’s dinner with the millet and heated it up in the microwave. Then drizzled olive oil and sea salt over that and topped with a fried egg. Some goat cheese on top would have been even better on this.
Dinners
For dinner this week I made what I call enchilada lasagna because I’m too lazy to roll the filling inside a tortilla. The basic idea is to sautée veggies (I like peppers, onions and zucchini…sometimes corn too) and then add in a couple cans of black beans. You could add chicken/beef to this veg mix too. Then use a store-bought sauce or make this 5 minute blender sauce. Use whatever tortillas you like – I like the toasted flavor of corn ones. Put sauce on the bottom of a casserole dish, then layer tortillas, some refried beans (I used canned and they make this so creamy!), your veg/bean mixture, some sauce and some cheese. Then repeat until you use everything up. I get about 3 layers. Bake at 350 for 30-35 minutes. I top with more cheese before serving because I think leftover baked cheese on top doesn’t taste good. But do whatever you want! Serve with more chips, guac, sour cream etc.
We ate the lentil soup I didn’t want for lunch a couple nights too. Along with leftover millet with butter + salt. I don’t like how many lentils are in this soup so next time I would half the amount of lentils and add a couple sweet potatoes to the soup.
Snacks
Bars are what I take to the coffee shop. Right now I’ve got Rx bars and KIND bars on hand.
Pumpkin bread with butter. I added chocolate chips to this recipe.
Sliced apples and cinnamon eaten in the library while doing some blog and e-course writing.
And the regular ice cream nighttime snack routine that happens probably 5/7 nights during the week. This is a staple. This was Breyer’s vanilla – which tastes so amazingly fresh – with TJs sea salt brownie bites.
MOMMA COALE IN THE HOUSE!!!!! Off to go eat and drink my way through Boston with my favorite lady. Have a fab weekend!

Hi Robyn! You asked what else you could do with toast and I love toast so I thought I’d give you a couple of my favs! I love cream cheese on toast (you can add everything bagel seasoning or jelly) which is reminds me of a bagel. Also, I like putting refried beans on toast with guacamole sometimes for lunches. Beans on toast is actually an English dish and this is my take on it =) Lastly, this is really strange but I often make avocado toast and then top it with strawberry/ grape jelly and a sprinkle of sea salt/ cinnamon. My boyfriend thought I crazy until he tried it, and now he requests it all the time lol.

Yes to cream cheese!! Ohhh love that refried + guac combo. I have heard fruit and avocado all the time together…which actually avocados are fruits so this makes sense 🙂 Thank you!!

Good lunchtime/snack toasts are toast with ricotta cheese, fresh tomatoes and salt/pepper, or a gourmet toastie ,ideally with Italian wood oven bread, smeared with avocado, topped with canned artichoke hearts and bocconcini cheese toasted under the grill with a sprinkle of dried oregano at the end, delish!

I could seriously eat toast every day as well! Lately I’ve been loving turkey deli meat + mashed avocado + salt & pepper on toasted English muffins! Which obviously it would be delish on any toasted carb source 🙂

My favorite toast is butter + nutritional yeast! I’m obsessed with nutritional yeast I think it tastes so good haha. Sometimes if I want more crunch I’ll add sunflower seeds. This toast alone isn’t enough of a meal for me but on the side of something more hearty (like savory oatmeal) it is soooo satisfying!

The next time I buy ricotta for a recipe, I want to try ricotta and jam on toast (it’s on the brunch menu at Tatte).
One thing I love that isn’t too different from what you’re doing is avocado on toast with a fruit-infused hot sauce. I have a raspberry-infused one that is delicious on toast with avocado! In fact, I feel like I’m not going to be super up for cooking tonight at the end of what has felt like a no-end-in-sight week, so I’ll probably end up with fried eggs and that very toast!

Also meant to mention re: fun and delicious bread — obviously Iggy’s is super great, but another great one is When Pigs Fly. Their olive loaf is out of this world (definitely a cheese plate staple with my friends!), but I also love their seeded whole grain, multigrain anadama, and six grain pumpkin seed for everyday bread/toast situations!
They have a location near Coolidge Corner and one in Somerville too, and they show up in grocery stores as well. Enjoy!

My toast is nowhere near as gourmet sounding as the ones above (but I’m a college student and this is intuitive eating for me :P) but I love to put but butter on toast and then sprinkle granola on the butter to add some crunch and extra sweetness!

My favorite toast snack as a child was toast+olive oil/butter+ garlic salt and Parmesan cheese, made nice and toasty under the broiler. I still make it sometimes when the craving strikes!
I made the same soup and felt similarly about the lentils. The next time I made it, I nixed the lentils and added a can of chickpeas and some chopped sweet potatoes instead. It was delish! Much better for my taste buds 🙂

Mmm toast! I love tost with avo + everything bagel salt from TJs plus nutritional yeast. Nutritional yeast just really adds something to avo toast. I’m also big on ricotta (I use kitehill but you can use whatever) and chopped figs and/or jam. MmMmmm!

These ideas are great! I always appreciate food inspiration.
Lately I’ve had a pretty good go of intuitive eating, but have had some triggering body issues/changes come up. I’m trying to dress comfortably, and keep going in light of mental health, but I do find that it gets challenging to eat intuitively in light of body issues and discomforts. Would love to hear your thoughts sometime on persisting with intuitive eating despite body challenges!

MMMMM Yay for pumpkin bread any time of year, and I love how bread is such a vessel for all the toppings whether they be savory or sweet. You always find some really yummy sounding breads; you’ve definitely inspired me to try more breads from our local grocery store bakery.

Vegemite on is a firm staple, but probably difficult to source where you are 😂. Another one I love is a classic; toast with *so much hummus*, tomato, cucumber, red onion, salt and pepper. Except it tends to get really tall and all the toppings fall of when you try and eat it 😢. I also do scrambled or poached eggs on toast all the time.
Re: making sourdough. I do it. It’s heaps of fun but can be a little tricky to start off with. I never get results as good as commercial sourdough,I think it’s because my oven doesn’t get hot enough.

My mom has a TEN YEAR (she’s a passionate cook!) old sourdough starter that I am dying to get my hands on to try and make my own loaf. Honestly, as far as toast is concerned – my good old childhood favorite of toast with cinnamon and sugar is my absolute fav. Enjoy spending time with you mom in Boston! This is a toast favorite of mine that was posted years ago by Anne from Fannetastic. I have this several times a week and absolutely LOVE it: smear some almond butter on a slice of cinnamon raisin toast, then spread some cottage cheese over it, and finally top with blueberries. It is pure heaven! and a great recovery snack after a workout….
